1. Water by the cup: cold, one cup each
2. One heaped teaspoon of coffee, 7 to 8 g, ground powder fine
3. Sugar now, if any, never after
4. Stir before the heat, never once it is on
5. Low heat, about 3 minutes
6. Let the foam rise; it starts at about 80 °C
7. Off before it spills: the foam into the cup first
8. Back on the heat; it rises again at about 90 °C. Off before it boils
9. Pour slowly; the grounds stay behind
The Turkish Coffee Culture and Research Association's guide says room-temperature water; most guides say cold. We follow cold: both start far below the 80 °C where the foam forms, and what both rule out is hot water from the kettle. Mehmet Efendi's guide stirs while it heats and brings it to a second boil; we follow the association: stir only before the heat, and off before it boils. The cezve is our own drawing of a generic one-cup pot.
